Dutch Apple Pie with Bourbon Vanilla Maple Whip by the Manly Vegan

This pie is crazy good. A non-vegan friend and myself ate it warm and they couldn't believe how insanely good it was and I hadn't even made the whip topping yet. Which holy hell, up's the ante of the entire situation.

I chose not to peel the apples and it gave the pie a really nice rustic look and taste. This tastes what I remember Burger King's apple pie tasting like, only not shitty and made with all organic ingredients. If you use a pre-made pie crust it's super simple too. Then once you make the whipped topping, you'll be licking spoons and patting yourself on the back like, "I can't believe I just made fucking Cool Whip in my kitchen with 3 ingredients in 10 minutes." The longest part is waiting for the can to chill. This allows the fat and water to separate, then you can just scoop out the thick, creamy goodness and save the water for smoothies and drinks!

Dutch Apple Pie

Ingredients:
  • 1 pie crust (Whole Foods has 2 packs in the frozen section clearly marked Vegan.)
Filling:
  • 4 cups Honeycrisp Apples (took me 3 apples) - peeled, cored, and sliced
  • 1 tbsp. Lemon Juice
  • 1/2 cup Organic Cane Sugar
  • 1/4 cup Organic Light Brown Sugar- packed
  • 3 tbsp. Flour
  • 1 tsp. Cinnamon - ground
  • 1/4 tsp. Nutmeg - ground
Crumble Topping:
  • 3/4 cup Flour
  • 1/4 cup Organic Cane Sugar
  • 1/4 cup Organic Light Brown Sugar - packed
  • 1/3 cup Earth Balance - room temperature
Instructions:
  1. Preheat oven to 375°F.
  2. In a large bowl, mix sliced apples, lemon juice, both sugars, flour, cinnamon, and nutmeg until well coated.
  3. Pile into crust.
  4. In a medium bowl, with a fork: mix flour, both sugars, and Earth Balance until coarsely crumbled.
  5. Sprinkle evenly over apples.
  6. Bake at 375°F for 50 minutes.

Bourbon Vanilla Maple Whip

Ingredients:
  • 1 can of unsweetened, organic coconut milk - refrigerated for at least 24 hours.
  • Bourbon Vanilla Extract (I used Trader Joe's)
  • Organic Grade A Maple Syrup
Instructions:
  1. Scoop out the thick coconut from the top of the can and put into your mixing bowl. Whip on high until it starts to thicken.
  2. Add in vanilla and maple syrup to your taste preference.
  3. Try not to eat all of it right out the bowl with a spoon.
  4. Top warm apple pie with it, or whatever else you like.
