I recently spent a week in Huntsville, Alabama and at first I was worried I might not survive. Happy Cow was coming up short with anything besides a very promising grocery store and it's a town, and state, that I've never been to.
On the day of my arrival, after checking into my hotel, I checked out the grocery store. Earth Fare turned out to be spectacular and I wish I had one near me! They had some really great Buy One, Get One deals including Field Roast, Tempt Hemp Milk, and Daiya Cheesecakes (which I managed to abstain from). Luckily, I had a pretty complete kitchen in my room (everything but an oven) so I was able to get some good stuff to hold me over.
Pasta with roasted garlic sauce and Field Roast Italian sausages for added protein. Upton's Naturals BBQ jackfruit with rolls and Daiya Mac & Cheese. Cereal and plant-based protein powders. It's actually quite an anxious feeling being in a supermarket, knowing you have a kitchen, but not your pantry. I think I did pretty good.

After I got my groceries into the fridge, I hit up the NASA Museum right by my hotel. I recommend checking that out if that sort of thing interests you. As a bonus, an adult took out a whole rack of plates in the gift shop.
The rest of the week was filled with work and trying to find some places to eat besides my hotel room. As I mentioned before, Happy Cow turned up few results but turns out things are on the up and up there. I found a few new places and added some reviews to Happy Cow, which I've collected below.
Mellow Mushroom
I finally found a Mellow Mushroom to try! I asked for the separate vegan menu and got the veganized Thai Dye pizza with Daiya, tempeh, cucumber, tomato, basil, and sweet chili sauce, on a garlic olive oil base. Also, pretzels with salt and mustard.Very filling, lots of dough. The kind of make-your-jaw hurt amount of dough which I'm not the biggest fan of. They also have calzones available.
Happy Hour is a great deal on beers with $1 PBR and $2 Yuengling.

Mason Dixon Bakery & Bistro
A gluten free bakery and bistro? In Huntsville, AL? This was a bit of a surprise and a welcome find.Everything is labeled and the vegan menu is on the reverse side of the menu, no need to ask for it. I had the house salad (greens, apples, fennel, onion, candied pecans, and a smokey dressing) which was delicious and a side of buffalo cauliflower, which was simply roasted and tossed in hot sauce. Filled me up without weighing me down.
They also have sandwiches including a bahn mi. They offer the option to sub portobello mushroom for the meat on some of their sandwiches.
Vegan desserts have a separate area of the bakery case and all their allergens are listed in their name card. I had a Cookie Monster cupcake with with stuffed with a scoop of cookie dough. Could not tell it was vegan or gluten free!
The Roost Southern Kitchen
Happened to come across this place searching vegetarian on Google on my last night in town. So glad I did. Run by a sweet southern family who greeted me happily.
They had 5 options for vegetarian, of those two were vegan. The pecan patty medallions and the vegan fried fish. I went with the former. It was only $6.75 and included 2 sides! I was surprised how many of the sides were vegan or had the option and I landed on southern greens, potato salad, and I added Mac and cheese because I had to. All that with a sweet tea came to less than $12.
Super casual, I was actually expecting a hip, rustic themed restaurant based on their logo design and their online presence. But it's a nice place to grab a quick bite to either eat there or take to go.

All in all, I'd say if you're passing through, Huntsville is a pretty nice stop.
On my way home, due to so few flights from Huntsville, I had a 3 hour layover in Washington, D.C. So for bonus points I hit up Busboys & Poets for brunch.
