Sweet Potato Sausage Breakfast Sandwich with Creamy Hollandaise

This was a late night, "what am I having tomorrow?" thought. I was stoned and dreaming about food. "I bet I could make a patty out of sweet potatoes and Field Roast apple-maple sausage. Yeah, and if sweet potatoes are here, avocados are always close by. I wonder if I could make vegan hollandaise? I never really even ate that before I was vegan, but I bet it'd be good on this sandwich." It went a little something like that. Well they all made it out to this breakfast party and it was fantastic.



This is definitely a recipe that I'll be tweaking every time I make it. Maybe add some liquid smoke, onions, or apples to the patty. The sweet potatoes start to get nice and sticky and holds together alright with just the roasted potatoes and sausage crumbles. This is a nice breakfast that is super filling but does it with good stuff. It almost seems like a greasy breakfast sandwich from a diner but then you realize you know exactly what's in it and it's sweet, savory, maple goodness. The hollandaise adds a nice tang and a Field Roast Chao slice gives it a classic feel.

As far as cooking the patties goes, I have an awesome Cuisinart 5-in-1 griddler. It resembles a Foreman grill but the plates are interchangeable. This eliminates my need to flip as I can cook them sandwiched between two griddle plates. Basically, don't be mad at me if this is a catastrophe in a frying pan.



Sweet Potato Sausage Breakfast Sandwiches

Makes 2-3 Sandwiches

Ingredients:

Sweet Potato Cakes
  • 2 small sweet potatoes 
  • 1/4 tsp. cinnamon 
  • 1/2 tsp. crushed chipotle chili 
  • 1 tbsp. canola oil 
  • 1 tbsp. maple syrup 
  • Salt and pepper 
  • 4 Field Roast apple-maple breakfast sausage - crumbled 
  • 1 flax egg ( 1 tbsp. ground flax seed mixed with 3 tbsp. warm water) 
  • Coconut flour - as needed 
  • Preheat oven to 350° and line a baking sheet with parchment paper. 
  1. Peel and chop your sweet potatoes. In a small bowl or 4-cup measuring cup, toss the sweet potatoes with the oil, syrup, cinnamon, chipotle, and season with salt and pepper. 
  2. Spread on the baking sheet and bake for 40 minutes. Stirring once halfway. 
  3. Remove from the oven and let cool slightly. 
  4. Toss your sweet potatoes and crumbled sausage in a bowl and slowly pour the flax egg over. Be careful, you might not need the whole thing. You want it to resemble the makings of a meatball. Use a small amount of coconut flour to absorb some of the moisture if needed. 
  5. Separate your mixture into two portions. Set your griddle on medium-high and cook for 5-6 per side. (Or 8 minutes total if using a griddler.) 

Hollandaise
  • 1/4 cup raw cashews - soaked for 4 hours or overnight 
  • pinch sea salt 
  • pinch cayenne pepper 
  • 2 tbsp. + 1 tsp. lemon juice 
  • 3 tbsp. water 
  • 2 tbsp. olive oil 
  • 1/2 tsp. apple cider vinegar 
  • 1 tsp. Dijon Mustard 
  • 1 tbsp. Bragg's Nutritional Yeast 
  • Fresh cracked pepper 
  1. Add all ingredients except the pepper into a blender. Blend until smooth. 
  2. Pour into a bowl over a pot of simmering water (or use a double boiler) and stir until hot and sauce thickens. Season with pepper and remove from heat. 
  3. Keep warm until you're ready to eat. If the sauce is to thick just add a bit of water as needed and whisk until it's reached your desired consistency. 

To Assemble Sandwich (Open to interpretation.)
  • Sprouted Grain English Muffins - toasted 
  • Field Roast Chao Slice (I used creamy original.) 
  • Spinach 
  • Avocado 

From the bottom up: Muffin, mashed avocado, spinach, patty, cheese, hollandaise, top muffin.
